Grilled Apple Salad
Ingredients
- 1 cup pecan halves (toasted)
- 4 Gala apples
- 1 (6 ounce) package baby spinach
- 1 (5 ounce) package spring mix
- 3 ounces extra-sharp white cheddar cheese (shaved)
- Salt & pepper to taste
Vinaigrette
- ⅔ cup canola oil
- ⅓ cup Apple cider vinegar
- 2 green onions, minced
- 3 tablespoons light brown sugar
- 3 tablespoons fresh basil, chopped
- 1 tablespoon Dijon mustard
- ½ teaspoon dried crushed red pepper
- ¼ teaspoon salt
Directions
Coat the grill with olive oil or cooking spray.
Preheat the grill to a medium-high heat. Cut the apples crosswise into ¼-inch thick rings. Grill apple rings, covered with grill lid, 2–3 minutes on each side or until crisp-tender. Arrange the spinach, mixed greens on a plate and top with apples, cheese and toasted pecans. Season with salt and pepper and serve with the vinaigrette (whisk all ingredients until blended).
