My Favorite Cole Slaw


  • 3 pounds cabbage, chopped
  • 2 peppers (one red and one green), chopped
  • 2 medium white onions, chopped
  • 2 tablespoons salt
  • 2 tablespoons mustard seed
  • 1 (4-ounce) jar pimento, diced
  • 2 cups vinegar (red wine distilled vinegar)
  • 2 cups water
  • 2 cups sugar


  1. Mix first six ingredients. Then bring vinegar, water and sugar to a boil, let cool and pour over cabbage mixture. Mix well and put in a jar and keep in refrigerator. Will keep for weeks.
