Apple Crumb Cake

  • 3 medium size apples, peel and cube
  • 1 cup light brown sugar
  • 2 tablespoons cinnamon.
  • 2 cups all-purpose flour
  • 1 cup sugar
  • 1 tablespoon baking powder
  • 1 teaspoon salt
  • ½ cup butter, softened
  • 3 eggs
  • 1 (8-ounce) package cream cheese at room temperature
  • 1 teaspoon vanilla extract
  • 1 stick butter, melted
  • 1 box (16 ounces) confectioners’ sugar

  1. Preheat oven to 350 degrees.

  2. Coat a 9-by-13-inch pan with cooking spray. Mix apple pieces, brown sugar and cinnamon and set aside.

  3. Combine flour, sugar, baking powder, salt, softened butter and 1 egg. Pat crust down tight in the pan and set aside.

  4. Whip the cream cheese until light and fluffy. Add 2 eggs and beat until incorporated. Add vanilla and melted butter. Beat until well blended. Add the confectioners’ sugar about a cup at the time, until blended.

  5. Gently fold in the apple mixture. Pour this mixture over the crust. Bake until the center is soft and a little jiggly in center. Don’t overcook or it will be dry. Hard to put exact time as all ovens are different.

Optional: Add a dollop of whipped cream and a drizzle of caramel sauce.

Editor's Note: When this recipe was originally printed in our February 2019 issue (page 41), we mistakenly listed a total of five eggs. You will only need three to whip up this treat, as indicated above. This online version is accurate, and we also printed a correction in our March 2019 issue (page 5).

  • Baking the Apple Crumb Cake this morning, was a bit confused, as the printed version in the magazine notes 2 extra eggs. I searched and re-read the recipe over several times. Recipe requires in 3 eggs total, I see it is correct online. Please correct!
