Cranberry-Pineapple Minis


  • 1 can (20 ounces) Dole Crushed Pineapple, in juice, undrained
  • 2 packages (3 ounces each) Jell-O Raspberry Flavor Gelatin
  • 1 can (16 ounces) whole berry cranberry sauce
  • ⅔ cup chopped Planters Walnuts
  • 1 apple, chopped


  1. Drain pineapple, reserving juice.

  2. Add enough water to reserved juice to measure 2½ cups; pour into saucepan. Bring to boil. 

  3. Add dry gelatin mixes to saucepan; stir 2 minutes until completely dissolved. Stir in pineapple, cranberry sauce, nuts and apples. 

  4. Spoon into 24 paper-lined muffin cups. Refrigerate 2½ hours or until firm. Remove desserts from liners before serving.

    My sister prepared this dish for Thanksgiving Dinner. She substituted cherry jello for the rasberry jello. It was delicious. I'm adding this one to my recipe collection. Give it a 5 star rating!
