No-Bake Energy Bites

No-Bake Energy Bites

Medium-sweet, peanut-buttery, oaty balls of goodness! Pop one in your mouth for a quick burst of energy before you hit the trail.


  • ⅔ cup toasted coconut flakes, optional

  • 1 cup rolled oats

  • ½ cup peanut butter

  • ½ cup ground flax seeds

  • 1 teaspoon vanilla extract

  • ½ cup semisweet chocolate chips

  • ⅓ cup honey or agave nectar

  • 1 tablespoon chia seeds, optional


  1. If you choose to toast the coconut, spread it in an even layer over a baking sheet and bake at 350 degrees for 8–10 minutes. Stop to stir every two minutes and remove when flakes are golden brown.

  2. Stir all ingredients together in a medium bowl until thoroughly mixed. Cover and let chill in the refrigerator for half an hour. Roll into one-inch balls.

  3. Store in an airtight container and keep refrigerated for up to one week.

  • Unless it is correct, or, I'm looking too deep into this-----page 32 of Carolina Kitchen (Krispy Kreme Cannoli/Everything Bubble Bread) title page is correct. Page 33 title page is Carlina Kitchen (No-Bake Energy Bites). Is the title page spelled correctly in my hard-copy magazine?

  • I doubt that the hard-copies of the magazine are going to be re-mailed w/ the correction, that was detected of the misspelled word!

  • I love these with a cup of coffee in the mornings. I wouldn't change a thing about them..perfect.
